The salubrious cuisine of the CERVO Restaurant
Knowingly simple and refined might be the best way of characterising the cuisine of the CERVO Restaurant & Bistro. At the CERVO (“Deer” in Italian, also taking its name from the hotel), we continue a long-standing tradition of hospitality. On the site of the contemporary zum Hirschen Hotel, the erstwhile pilgrim’s hospice once served as a medieval shelter (or Hospitium) for pilgrims crossing the mountains to visit the nearby Holy Sanctuary en route to Rome. The cuisine of the Gasthof zum Hirschen Hotel is also influenced by the writings of 12th Century herbalist/author, Hildegard von Bingen and clergyman/herbal expert, H.J. Weidinger.

The sumptuous platters served in our elegant CERVO Restaurant, Bistro veranda or in the hotel garden are nourishing and health-giving. In the evening, our medieval cellar bar offers a choice selection of herbal digestives.
