The kitchen of the CERVO Restaurant on the first floor of the Gasthof Zum Hirschen Hotel merges two distinct culinary traditions. We take our cue from our geographic location at the meeting-point of our Alpine South Tyrol and the adjacent province of Italian-speaking Trentino. The hearty authenticity of simple Alpine fare is influenced by a rich palette of Italian flavours resulting in a distinctive fusion cuisine of its own.
At the CERVO Restaurant, we also subscribe to the Slow Food philosophy developed by Carlo Petrini and we don’t believe in taking short cuts! Following Hildegard von Bingen’s herbal recipes, we also have our own house aperitif.
The ingredients we source are always fresh and almost exclusively local. Even the breads we serve are sourced from a craft bakery in our village using his own organically-grown grains. With its sparse layout and earthy tones, our elegant, contemporary restaurant takes its cue from the long-gone medieval pilgrim’s hospice to create a modern refugium for discerning vacationers.
