South Tyrolean ill: our region on a plate

Since 2023 with our Restaurant CERVO we are member of the "Südtiroler Gasthaus" association. The award focuses on centuries-old South Tyrolean inn culture and unites family-run restaurants that live genuine hospitality day after day with heart and soul.

Our Gasthof Zum Hirschen in the village centre of Senale has always been a place of cosy get-togethers, where traditions are cultivated and the vernacular is at home. A social meeting place for sharing an espresso coffee as well as for intense moments of enjoyment for two or in community.

As the "Stube", the living-room in the South Tyrolean farmhouse, so the "Gasthof" in the village: a place for community, for living together and for exchange. Here, traditions meets the new and the different, locals meet guests.

We consciously live this hospitality by welcoming everyone as hosts in the third generation. Whether they have travelled from far away or are just around the corner - everyone feels at home right away. At the historic regulars' table in the vaulted cellar of the bar, we tell stories and pass them on from generation to generation, while in the CERVO restaurant and veranda we serve the best that the region and the season have to offer.

As a member of "Südtirol Gasthaus", we attach particular importance to the cultivation and further development of the traditional South Tyrolean cuisine. Ingrid Mocatti's cuisine is based on recipes that have been handed down from generation to generation, prepared in time-honoured ways or reinterpreted. The ingredients come as far as possible from our local farms and partners according to the zero-kilometre philosophy. This makes the dishes storytellers and ambassadors of the area on the language and cultural border between the regions of South Tyrol and Trentino.

Depending on the season, we redesign the menu and offer our guests fresh, regional and seasonal dishes. While the South Tyrolean Sunday roast is served during the winter months, we present light vegeterian dishes during the "South Tyrolean Summer Freshness" week. For the autumn harvest time, the local Radicchio Tardivo, pumpkin and chestnuts become the protagonists in the Slow Food kitchen.
