#Recipe: Larch-Shoots Pesto

 

Pesto with Fresh Larch Shoots and Blossoms

Ingredients for approx. 250g of pesto:

  • 100g larch shoots
  • 50g grated Parmesan
  • 50g almonds (alternatively pine nuts or walnuts)
  • 1 clove garlic, chopped
  • 150ml olive oil
  • Juice of half a lemon
  • Salt and pepper to taste (alternatively: galangal powder)

Preparation:

  1. Thoroughly wash the larch shoots and pat them dry.
  2. Lightly toast the almonds (or pine nuts) in a pan without oil until golden brown. Let them cool.
  3. Place the larch shoots, grated Parmesan, toasted almonds, chopped garlic, lemon juice, salt and pepper, and galangal in a blender.
  4. Slowly add the olive oil while blending until a smooth paste forms. Depending on the desired consistency, more or less olive oil can be used.
  5. Taste the pesto and adjust with more salt and pepper if necessary.
  6. Transfer to a clean jar and store in the refrigerator. Before serving, the pesto can be enhanced with a splash of lemon juice.

Tip:
This larch shoot pesto is excellent as a spread, with pasta, as a dip, or as a flavorful ingredient in various dishes.
