#Recipe: Larch-Shoots Pesto
Pesto with Fresh Larch Shoots and Blossoms
Ingredients for approx. 250g of pesto:
- 100g larch shoots
- 50g grated Parmesan
- 50g almonds (alternatively pine nuts or walnuts)
- 1 clove garlic, chopped
- 150ml olive oil
- Juice of half a lemon
- Salt and pepper to taste (alternatively: galangal powder)
Preparation:
- Thoroughly wash the larch shoots and pat them dry.
- Lightly toast the almonds (or pine nuts) in a pan without oil until golden brown. Let them cool.
- Place the larch shoots, grated Parmesan, toasted almonds, chopped garlic, lemon juice, salt and pepper, and galangal in a blender.
- Slowly add the olive oil while blending until a smooth paste forms. Depending on the desired consistency, more or less olive oil can be used.
- Taste the pesto and adjust with more salt and pepper if necessary.
- Transfer to a clean jar and store in the refrigerator. Before serving, the pesto can be enhanced with a splash of lemon juice.
Tip:
This larch shoot pesto is excellent as a spread, with pasta, as a dip, or as a flavorful ingredient in various dishes.
