The essence of Travel and the new Pilgrim at Zum Hirschen.
As a host, I’m often asked: What makes Zum Hirschen unique?
The answer doesn’t lie in one detail. It lives in the layers—of time, of silence, of stone. In the quiet dialogue between past and present, place and person. In the subtle tension of contrasts: South Tyrol and Trentino, German and Italian, Alpine and Mediterranean. That’s where the soul of Zum Hirschen lives.
For centuries, this place was a hospice for pilgrims.
Today’s traveler may not carry a staff, but carries questions. They are, in a way, pilgrims 2.0—experience seekers, modern Sinnsucher, searching not for distraction but for depth. They come not for a superficial consumption, but to connect.
That is what we built our philosophy upon.
Together with architect Lorenzo Aureli, we translated the spirit of the old pilgrimage into architecture: simple, essential, quiet. Inspired by Bauhaus clarity and the humility of monastic spaces. No alpine nostalgia—just light, raw materials, and space to breathe. Each room reflects a different chapter in the house’s long story, from medieval foundations to modern interpretations.
In the kitchen, we follow Slow’sophia—a philosophy of slowness and intention.
It is a bridge between this spiritual place and the food we serve. Rooted in the principles of Slow Food, guided by the herbal wisdom of Hildegard of Bingen and Father Weidinger, our cuisine nourishes more than appetite. Herbs, elixirs, bitters—each ingredient supports well-being and awareness. We cook with what grows here, in rhythm with the land and the seasons, but always with the senses in mind. Every plate becomes a voice of this territory.
Of course, there is also hospitality.
Not staged, not distant—but real. It’s not about traditional service, but about offering a genuine welcome. Just as pilgrims once knocked and were received, we now accompany our guests with attentiveness, openness, respect, and warmth. To us, hosting means creating a space where meaningful connection can happen—with oneself and with others.
Finally, there are the small rituals.
A Hildegard Spritz before dinner becomes more than a drink—it’s a quiet moment to pause, to arrive. To shift inward.
Because travel, to us, is not about escaping.
It’s about returning. To presence. To clarity. To yourself.
