Pretzel-Dumplings with Lardo Lardo
on Radicchio Tardivo Salat

 

Ingredients for 4 people:

  • 50 g Speck (bacon)
  • 30 g lardo
  • 30 g onion
  • 150 g pretzel dumpling bread
  • 25 g butter
  • 40 g flour
  • 100 ml milk
  • 2 eggs
  • 2 tablespoons chives
  • 1 radicchio tardivo salad plant
  • Trentingrana cheese for garnish

 

Preparation:

Dumplings: Place the pretzel bread in a bowl. Dice the onion and bacon, then sauté them in butter in a pan. Add the diced lardo to the bread. Mix the eggs, milk, and chives with the bread. Cover the dough with a damp cloth and let it rest for 30 minutes. Afterward, shape the dumplings and simmer them in salted water or broth for 10-15 minutes.

Radicchio Tardivo Salad: Wash the radicchio with warm water, cut it in half, remove the core and tips, then slice it very thinly. Marinate with olive oil, salt, pepper, and a sweet fruit vinegar. Arrange the dumplings on the marinated salad, sprinkle with shaved Trentingrana cheese, and garnish with radicchio tips.
