#Recipe: Spelt Hearts according to Hildegard of Bingen

 

Speltheart cookies after Hildegard of Bingen

 

Ingredients:

  • 250 g butter, room temperature
  • 200 g cane sugar
  • 2 eggs
  • 1 egg yolk
  • 500 g fine spelt flour
  • 100 g ground almonds
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 tsp nutmeg
  • 1/4 tsp galangal
  • A pinch of salt

Preparation:
Start by creaming the butter and cane sugar together until light and fluffy. Gradually add the eggs and egg yolk, mixing well after each addition. Then, incorporate the remaining ingredients into the mixture, and knead everything into a smooth dough. Once the dough is ready, shape it into a ball, wrap it in plastic wrap, and let it rest in the fridge for an hour. After chilling, roll the dough out on a floured surface to your desired thickness, then cut out hearts in various sizes. Bake them in a preheated oven at 160°C (320°F) with fan circulation for 10-12 minutes, or until lightly golden. While the cookies are still warm, dust them with powdered sugar and allow them to cool completely.

Variation:
For a delicious twist, you can dip the cooled cookies halfway in dark chocolate coating. Alternatively, for a jam-filled treat, sandwich two cookies together using apricot, quince, or elderberry jam.
